    • 42 chicken drumsticks
    • 2 chicken drumsticks
    • 1 cup millet
    • 1 cup peas (fresh or frozen)
    • 2 medium-sized potatoes, peeled and diced
    • 2 tablespoons of oil (olive or sunflower)
    • 1 onion, finely chopped
    • 2 cloves of garlic, finely chopped
    • 1 carrot, cut into rings
    • 1 stalk of celery, cut into rings
    • 1 bay leaf
    • 1 teaspoon of dried thyme
    • 4 cups of chicken stock
    • Salt and pepper to taste

    Instruction:

    1. Wash and salt the chicken thighs and drumsticks as desired. Over medium-high heat, heat 1 tablespoon oil in a large saucepan or stock pot.
    2. Add the chicken drumsticks and drumsticks to the pot and cook until golden brown on all sides. Remove the meat from the pot and set aside.
    3. In the same pot, add the remaining tablespoon of oil, onion and garlic. Stew them for a few minutes until the onion becomes glassy.
    4. Add carrots and celery to the pot and simmer for a few more minutes.
    5. Return the chicken pieces to the pot and add the bay leaf, thyme, salt and pepper to taste. Stir to combine the ingredients.
    6. Add millet and chicken stock and mix well. Bring to a boil, then reduce the heat, cover the pot and let the stew simmer for 20-25 minutes or until the millet is tender.
    7. Add the peas and sliced ​​potatoes to the pot and cook for another 10-15 minutes until the vegetables are soft and all the flavors have combined.
    8. If necessary, add salt and pepper to taste.

    Serving: Chicken stew with millet is ready! Serve it warm in deep bowls. You can sprinkle it with fresh parsley or coriander for extra flavor and decoration. This tasty and nutritious stew will give you the pleasure of enjoying a healthy meal rich in diverse flavors.
